Many people are getting into baking during this coronavirus lockdown period and since they have more time on their hands, baking is also one of the fun activities to do with kids. It’s wise to also get him involved as a positive distraction, especially if he loves it and never had time. Even if your hubby doesn’t love baking, with plenty on our hands, this may be the best time to learn.
Some things are short in supply in the supermarkets and people are told not to go out except for essential items; getting lots of ingredients might be a huge task for now, so that is why we bring you some desserts to try out in this period and with little ingredients to improve your baking skills.
Flourless Peanut Butter Cookies
All you need for this crunchy snack are just three ingredients…
Peanut butter (crunchy or smooth) 200g
An egg (you can add extra if you wish)
Heat up your oven to 180c and line your baking tray with greaseproof paper or simply use butter.
Mix the peanut butter and sugar in a bowl until well combined. Break in the egg and mix till it forms a dough (you can also add chocolate chip if you want)
Roll them into 1 inch balls and place them a few inches apart on the sheet
Flatten with a fork (you can make crisscross pattern with your fork if you like)
Bake for 10-12 minutes until they are golden around the edges and let them cool.
Chocolate Ice Cream Cake
Another 3 ingredients dessert.
1 1/2 cups full fat chocolate ice cream or gelato about 1 pint (see note)
1 cup cake flour
1 1/2 tsp baking powder
Bake for about 25 minutes or until a toothpick inserted comes out clean.
Almond Microwave Bread
For those who don’t know, this almond microwave bread is extremely low in carbs, making it the perfect bread for those on a low carb or gluten free.
Almond flour 2 table spoons
Butter 2 table spoons
Baking powder 1/2 teaspoon
Add your all ingredients in a microwave safe mug and mix all together, make sure they are properly mixed. (your mug should not be too narrow in other for the bread to be well done)
Microwave for 1 or 2 minutes
Allow it to cool then bring it out from the mug. (you can toast your almond bread with butter if you wish).
